Breakfast Burritos!
I'll be the first to say that I have NEVER liked breakfast burritos. I feel like everyone around me always hypes them up and gets me excited to eat them and then every single time I try, it's just meh.
I was on a mission to create a breakfast burrito that I actually liked, and I succeeded!
All it took:
Olive Oil
Tortilla
Frozen hashbrowns from Wal Mart
Eggs
Shredded Cheese
Cholula Sauce
I decided not to add any meat to my breakfast burrito because that always seemed to be the wild card. I would get grossed out if the bacon wasn't crunchy enough, or if I got a nerve with the sausage, so I decided to axe meat all together from this burrito.
Instructions:
Put Olive Oil on pan and let it warm up
Add 1 hashbrown (flip after one side starts browning)
Break the hashbrown up with spatula
Add an egg and keep mixing until the egg is cooked.
Turn burner off and add cheese while pan is still warm
Mix all together until it's a gooey cheesy mess
Put mixture onto tortilla and fold up!
Optional - Add Cholula sauce for extra flavor.
I am not a big fan of adding salt and pepper to things, but you could add some if you'd like!

Edit: Since we are starting a garden, I opted for using whole Yukon potatoes that we grow instead of hashbrowns from the store. I'll be the first to admit that it's not as good as the hashbrown, but I suppose it's still better than anything I have had from restaurants!
